Pecan Pie Tarts (Or Pie)





I realize that spring is not really the time for pecan pie... but who makes the rules regarding pie consumption anyway? I didn't get any pecan pie over the holidays (because the cooked version is SO unhealthy & I was on a strict diet at the time.) So I have been craving it for months!

Today I decided it was high time to try my hand at a much healthier raw version. (Well, as you can see I made it in tart form since it's just me and the hubby, but you could definitely make it full size if you wanted. And trust me, you'll want to. I'm starting to regret not making more.)

I didn't take photos of the process, but it's actually quite simple. No, I mean it.

Makes 4 tarts or one small pie.

Crust ingredients: 

1 cup soaked walnuts
1 cup soaked pecans
6 dates
1 tsp. coconut oil
Dash of cinnamon

Process everything in the food processor until firm and sticky. Press into your tartlets or pie pan.

Filling Ingredients:

1 cup soaked dates & the water they were soaked in
1 medium avocado
2 Tbsp. maple syrup
Dash of salt
1 tsp. cacao powder (for color)

Blend ingredients in a high speed blender until smooth. Pour into your tartlets or pie pan over your crust.

Topping:

1 and 1/2 cups soaked pecans
Macadamia nut caramel sauce (by Nicole at A Dash of Compassion)

Lay your pecans over the top of your pie. Freeze for 1-2 hours. Drizzle caramel sauce over the top before serving.

Oh my, this is so delicious looking. I think I have everything in my kitchen except for macadamia nuts.... I think I know one of the things I'll be making in a few weeks!

LOL, I know just how you are feeling right now! And thanks! You really don't need the macadamia sauce, it just makes it look prettier.
