These raw energy bars are nutrient dense, high in protein, super yummy, and with all the superfoods in them (maca powder, goji berries, hemp seed and chia seed) don't be surprised if you gain super powers after eating!
1 and 1/2 cups soaked nuts (I used cashew and pecan)
2 and 1/2 cups dried apricots
6-9 dates (use more if you want sweeter bars)
1/2 cup oats
1/2 cup hemp seed
1/2 cup dried coconut
1 Tbsp chia seed
1 Tbsp maca powder
1/2 cup goji berries
3 Tbsp. melted coconut oil
First process nuts, and set aside in a large bowl.
Put the remaining ingredients (except coconut oil and goji berries) in food processor and process until it begins to turn into a sticky batter. This will take awhile! Then, with the processor running add 3 Tbsp of melted coconut oil. You want it to be really well processed or the bars won't stick together.
Combine batter with nuts and goji berries and mix with your hands.
Press tightly into a baking dish lined with parchment paper. Freeze for 2 hours, then cut into bars.
Store the bars in the fridge or freezer to help them keep their shape.
