Raw Pasta Marinara and Strawberry Pie


These were the first raw dishes I ever learned how to make... maybe that's why they are still my favorite.

Pasta:

1 Zucchini sliced noodle thin (I have a fancy noodle maker thingie but you don't need it.) 
1/4 Red Pepper sliced
1/4 Jicama sliced
3-5 Baby Portobello Mushrooms sliced
A few slices of onion 

Marinara Sauce: 

1-2 Tomatoes
1/4 cup Sun Dried Tomatoes
1/4 cup (or less) Red Pepper
1/4 (or less) Jalapeno
1/4 inch Ginger
Splash of Olive Oil
Splash of Red Wine 
Dash Celtic Sea Salt
Fresh Basil to taste 

The pasta can be made with zucchini alone - in fact that's how I always used to make it. I just tried adding the red pepper, mushrooms, jicama and onions and it makes it extra tasty. Anyway, I'm not going to go over all the directions... I'm pretty sure you can figure out how it works. :) 

Strawberry Pie

Crust:
1 cup Walnuts soaked
4 Dates

Filling: 
2 cups Strawberries sliced

Topping: 
1 Banana 
1 tsp. Agave Nectar 

Blend walnuts and dates in food processor. Press into bottom of pie plate. Fill with strawberries (or any other fresh fruit.) Blend banana and agave in blender and pour over fruit. Enjoy!
