Raw Fajitas


Oh yum. These are definitely being bumped up to the favs list! So easy and my husband loved them too!

Red Pepper sliced thin
Onion sliced thin
Zucchini "     "
Mushrooms "   "

Marinade:
1 Tbsp. Nama Shoyu
2 Tbsp. Olive Oil
1 tsp. Red Wine vinegar (or Apple Cider)
1-2 garlic cloves chopped
1/2 tsp Cayenne
1/2 tsp. cumin
1/2 tsp. chilli powder
Dash of celtic sea salt

Marinate veggies for an hour or so. Pile on top of any kind of wide lettuce leaf, add guacamole, raw sour cream, salsa etc. and eat! (You really don't need salsa though as the veggies soak up all that marinade so they are pretty drippy as is.)

I was searing ideas for raw fajitas and I'm so happy to have found your blog! Your story is very similar to my own! I have been a vegetarian for a long time but still have had health/digestive issues. I've been trying to fill my life with more and more raw vegan meals and have noticed such a huge difference! Thank you for all of your wonderful recipes!
