Raw Spring Borscht


This is a delicious chilled soup that's perfect for a spring day. It's a lot of work... but it's raw food so by now we should know that goes without saying. (Juicer required.)
I adapted the recipe from Raw: The UNcook Book by Juliano. Feeds 1 person.

2-3 large beets
2 carrots
1 orange
1 inch fresh ginger
1/4 jalapeno

1/2 an apple
1/2 an avocado
A few tablespoons of leftover beet pulp.
Fresh dill if you have it

Juice the first 5 ingredients. Put juice in bowl and add chopped apple, avocado and beet pulp. Garnish with fresh dill. Serve immediately.
