Chocolate Chip Cookie Dough Ice Cream... or Cookies
2 cups soaked cashews
1/4 cup melted coconut butter (not oil)
3 Tbsp. agave
Dash of vanilla
Dash of salt
Dash of cinnamon
1 1/2 cups cacao nibs
Truth is there was actually a mango in this recipe as well because it was supposed to be mango coconut ice cream. But in the end the mango flavor was totally undetectable so I added cacao nibs and ta-da! chocolate chip cookie dough instead. But feel free to add a mango if you want. Add two, skip the nibs and perhaps you'll actually have mango coconut ice cream!
Anyway blend all ingredients (except nibs) in blender adding water as needed. Stir in nibs. Freeze the whole batch for ice cream or spoon out and refrigerate for cookies. Two desserts in one!
